Happy Veggie Thursday!

It's summer time and eggplants are in season so that's what we're going to feature on this week's #veggiethursday ! Eggplants come in a range of shapes and colors. Globe eggplants are the largest and the most common; Japanese eggplants are smaller, longer, and narrower. We love a good Italian eggplant parmesan, a Chinese stuffed eggplant, and one of our favorite dishes was from a Mediterranean Cafe called Mousakkah...... and how can we forget the ever so popular eggplant dip baba ganoush?

The wonderful health benefits of eggplants are primarily derived from its vitamin, mineral, and nutrient content. Eggplants are a rich source of vitamin C, vitamin K, vitamin B6, thiamin, niacin, magnesium, phosphorus, copper, dietary fiber, folic acid, potassium, and manganese. It also contains almost no cholesterol, or saturated fat.
